I first remember seeing Catherine McCord at the Sunday Hollywood Farmer’s years ago before we were both mothers. She was tall, blond, and beautiful and carried that certain effortless cool. From what I knew she was a model and TV spokesperson. I was pursuing other careers. Life for both us, I gather was a lot more simple. Over time we both became mothers, chefs and friends. Out of shear necessity and by the grace of God Catherine created Weelicous.com, the go to resource for moms and dads alike searching for creative yet practical ways to feed their kids wholesome and delicious food. The website offers up recipes and ideas for first foods, toddler foods, school lunches and family meals.
Now Catherine has ventured into the cookbook world with Weelicious: One Family. One Meal. Sure to be the savior to the many “short order” cooks which seem to be multiplying (no thanks to the multiplying picky eaters) in this country.
In her book Catherine imparts that “good habits start from the first few bites,” and reminds us that we need to continue introducing a variety of fruits and vegetables so that our kids get a diverse taste palette. I don’t know about you but I tend to get into a rut with what I feed my kids, my husband and myself, often making three to four different meals through out the week. Green beans, corn on the cob, quinoa and baked sweet potatoes. Boring.
Catherine encourages us to get our kids involved from the shopping by collaborating at the super market and farmer’s market to participating and preparing food in the kitchen. A key point she makes though is not to give our children too many choices, start small she says and offer them two options instead of a multiple choice.
The book then goes on to explain some key nutrition information like the facts that kids do indeed self regulate and that their taste buds vary than ours.
Catherine also reminds of why it is important to serve our children organic food when possible and includes that easy to forget Dirty Dozen list. Lastly before diving into 140 succulent family recipes she helps us stock our kitchen with the things we will need to create super fun dishes like animal shaped Veggie Nuggets, Italian Pasta Pie, Mexican Enchiladas and Sweet Potato Muffins. I for one can’t wait to test the recipes on my WHOLE family, with the help of my two kids of course!
